Maine Lobster Guacamole

Like guacamole? Then you're going to love this flavor-packed guacamole recipe featuring sweet Maine lobster!

Serves 2 

INGREDIENTS

Main Components:

  • Lobster, 1-2 lbs: 1 ea
  • Guacamole: 1 batch
  • Lobster dressing: 1 batch
  • Corn tortilla chips: 1 bag
  • Salt + FGBP: t.t.

Guacamole

  • Avocado, very soft but not mush: 1 ea
  • Red onion, small dice: ½ ea
  • Lime, juiced: 1 ea
  • Cilantro, chopped: 1-2 Tbsp
  • Jalapeno, seeded, minced: ½ ea or 1 small
  • Salt: t.t.

Lobster dressing

  • Lime, juiced: 1 ea
  • Cayenne pepper: 1/8 tsp – ¼ tsp based on your heat tolerance
  • Mayonnaise: 1 cup

METHOD

Guacamole:

  • Mash avocado into a paste with salt and lime juice.
  • Add in the rest of the ingredients and mix fully.
  • Store cold and air tight.

Lobster dressing: Combine all ingredients in a bowl and reserve.

Main Components

Bring a large pot of heavily salted water to a boil. Also for the adventurous type add in some spices to the water, such as the other half of the onion, jalapeno trim, 1 cup of white wine, and some bay leaves. Drop in your lobster and cook for 5 minutes. Shock the cooked lobster in ice water to cool rapidly.

Remove claw, knuckle and tail meat from the lobster once cooled. Dice the lobster meat.

Toss the lobster meat with the dressing until coated.

In a large bowl place the guacamole. Top with dressed lobster and serve with corn tortilla chips for a nice and refreshing dip to have while enjoying the summer sun!
