For Sichuan Chili Butter Lobster, you get fresh Maine lobster tails in the shell (four to five ounces each) to grill or broil, to be lashed with a generous slather of fiery chile butter, $119.99, four servings. Four hefty lobster rolls made with Momofuku’s complex wasabi-yuzu rémoulade involve a pound of lobster claw and knuckle meat (flash-frozen), crispy shallots, buns and the sauce, $129.99.
