Inspired by Momofuku’s iconic summertime seafood boils, these Sichuan chili butter lobster tails are addictively delicious and pack a spicy punch.
All it takes is 10 minutes to level up these tender tails. You can brush, drizzle or dip the Sichuan chili butter onto the lobster meat and we recommend adding some chopped herbs or scallions to round it all out.

What To Get: Fresh Scallions, Cilantro, Lemon
Preparation:
- Defrost frozen lobster tail under running water or in the refrigerator over 24 hours.
- Split tails in halves with a chef’s knife, clean out any grit under running water, pat dry.
- Preheat the oven to 400F.
- Season the lobster meat in its shell with a light pinch of salt. Place lobsters on a lined sheet pan.
- Warm up the Sichuan chili butter in a sauce pot. Mix well and spoon some onto the lobster.
- Place lobsters into the oven and let it roast for 6-8 minutes.
- Allow the lobsters to rest for 1-2 minutes before serving.
- Spoon the Sichuan chili butter over the lobster tails or serve it on the side with lemon.
- (Optional) Thinly slice scallions and cilantro to add extra fresh herbs to the dish.
Receiving Frozen Products
When you receive a food item marked “Keep Refrigerated” or “Perishable,” open it immediately and check its temperature. The food should arrive frozen or partially frozen with ice crystals still visible or at least refrigerator cold — below 40 °F as measured with a food thermometer.
Thawing Instructions
Always thaw lobster tails if they are frozen. The most effective way to do this is by placing them in the refrigerator for 24 hours prior to cooking. If you need them faster, you can thaw at room temp for a few hours, and if you need them right away thaw under running cold water.
Storage Instructions
Store in the freezer until you're ready to use/thaw for immediate use. It's best to keep the tails in their original packaging (not including the shipping box) or transfer them to airtight freezer bags to prevent freezer burn and maintain freshness.
Make sure your freezer temperature is set to 0°F (-18°C) or below to keep the lobster tails properly frozen. Items frozen can typically remain safe to eat for up to 6 to 12 months. However, the quality may begin to decline over time, so we recommend using them within the first few months of purchase for the best taste and texture.
