Once a week, we hand-select a lobster tail so extraordinary, so scarce, and so unlike the everyday catch that it gets its own spotlight. Maybe it’s a 16–20 oz Titan, maybe it’s a Monarch in the 14–16 oz range, or maybe—if fortune smiles—it’s a Zeus or Olympus tail, the kind of lobster that took two decades to grow.

We don’t just sell these tails. We drop them. And once they’re gone, they’re gone.
