Anyone can sell you lobster. Plenty of places will ship you something in a box and call it a day.

We've spent over a decade learning the difference between seafood and seafood done right — and it turns out the difference is almost entirely in the sourcing. Which boat. Which day. Which water temperature. Whether the guy who caught it brought it in at dawn or let it sit.

That's the part nobody sees, and it's the only part that matters. So we obsess over it. We track yield data most companies don't bother collecting. We turn away product that doesn't meet the bar, even when the bar is inconvenient. We built relationships with boats and processors over years, not invoices.

Maine's Oldest Working Wharf. Still Working.

We work out of 48 Union Wharf — built in 1793, the oldest working wharf on Portland's waterfront. Boats have been unloading the day's catch here since before Maine was a state. We didn't pick this spot for the view (though it's a good one). We picked it because it's where the lobster boats already were. Some things about doing business on the water haven't changed in 230 years. We're fine with that.
