INGREDIENTS:

  • 2 pounds of Maine lobster meat 
  • 1 stick of butter
  • 10 medium Yukon gold potatoes
  • a dollop of sour cream
  • 4-5 cups fresh peas (or other fresh green in season)
  • Evaporated milk (small can)
  • Salt and pepper

PREPARATION:

  1. Cook and pick lobsters. Sauté lobster meat in fry pan with butter, until butter turns orange. Add evaporated milk to mixture.
  2. Cook and mash potatoes; add sour cream.
  3. Cook peas or seasonable greens.
  4. Serve mash potatoes on plate, create a “well” in each serving, ladle lobster mixture into “well”, serve with fresh greens.

TO SERVE:

Spoon the buttery lobster mixture into each potato “well,” letting it pool like golden tidewater. Add a handful of bright green peas on the side — their color a reminder of Maine’s coastal summers. Finish with a sprinkle of cracked pepper and serve immediately, while the lobster is tender and the potatoes still hold their steam.
