Whip Yukon Gold potatoes until velvety with cream and butter, then gently fold in warm, sweet lobster meat. A sprinkle of chives adds brightness; a whisper of lemon zest cuts through the richness. It’s comfort food redefined — indulgent without being heavy, familiar yet unforgettable. The kind of dish that turns an ordinary evening into something worth remembering.
INGREDIENTS:
- 2 pounds of Maine lobster meat
- 1 stick of butter
- 10 medium Yukon gold potatoes
- a dollop of sour cream
- 4-5 cups fresh peas (or other fresh green in season)
- Evaporated milk (small can)
- Salt and pepper
PREPARATION:
- Cook and pick lobsters. Sauté lobster meat in fry pan with butter, until butter turns orange. Add evaporated milk to mixture.
- Cook and mash potatoes; add sour cream.
- Cook peas or seasonable greens.
- Serve mash potatoes on plate, create a “well” in each serving, ladle lobster mixture into “well”, serve with fresh greens.
TO SERVE:
Spoon the buttery lobster mixture into each potato “well,” letting it pool like golden tidewater. Add a handful of bright green peas on the side — their color a reminder of Maine’s coastal summers. Finish with a sprinkle of cracked pepper and serve immediately, while the lobster is tender and the potatoes still hold their steam.
It’s rustic elegance on a plate — the kind of meal that brings quiet satisfaction, a few smiles around the table, and maybe one or two people asking for seconds.
