Crockpot Lobster Breakfast Casserole

Lobster...for breakfast?! Yes please.

The only better way to start your day than bacon and eggs is by adding lobster to it! This is a crockpot dish that incorporates all of the breakfast staples in one shot that you can enjoy throughout the week. Rich simple flavors cooked in the most simple of ways. Life does not get much more luxurious than this folks.

Wine Pairing: Mimosas.

Ingredients 

For the Maine Event

  • Lobster Meat, cooked or uncooked, diced small: ¼-½ cup
  • Bacon, cooked and chopped: 8 slices
  • Tomato, diced small: 1 ea
  • Green bell pepper, seeded, diced small: ½ 
  • Mushrooms, diced small: ⅔ cup
  • Eggs: 5 ea
  • Milk: ¼ cup
  • Cheddar cheese or gruyere. Shredded: 1 cup
  • Refrigerated biscuits: 1 tube
  • Salt and FGBP: t.t.

Preparation

For the Maine Event

  1. Whisk together eggs, milk and cheese with salt and pepper until smooth.
  2. Stir in remaining ingredients besides the biscuits.
  3. Remove the biscuits from the container, separate them and cut each biscuit in quarters.
  4. Add biscuit pieces to the egg mixture and stir until they are coated.
  5. Spray the inside of your crock pot with cooking spray.
  6. Add the mixture into the crock pot and cook on high for 3 ½ hours.
  7. Enjoy eating like Royalty.
