Note from the chef: Sweet and savory, this dish is a delicious combination of Maine lobster tails coated in a honey-and-spice blend and fluffy cornbread waffles. The maple syrup drizzle adds the perfect finishing touch.
Ingredients:
For the sauce:
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup honey
- 1/4 teaspoon red pepper flakes
For the lobster fry batter:
- 1/4 cup (59ml) rice flour
- 1/2 cup (118ml) corn starch 1
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
Additional ingredients:
- (4) 5-6 oz Maine Lobster Tails, cut into half lengthwise
- Garlic powder, Old Bay seasoning, and honey powder to lightly season the lobster
- Oil for frying
For the cornbread waffles:
- 1 cup all-purpose flour
- 1 cup medium grind yellow cornmeal
- 6 tbsp sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup whole milk shaken with 1 tablespoon distilled vinegar
- 1/4 cup honey 1 tsp vanilla bean paste
- 2 large eggs
- 1/4 cup unsalted butter, melted and cooled slightly
Instructions:
For the sauce:
- Melt the butter in a small saucepan over medium heat.
- Cook the butter, swirling the pan occasionally, until it turns a deep brown color and has a nutty aroma.
- Remove the pan from the heat and stir in the honey and red pepper flakes.
- Let the butter cool slightly before using.
Sauce Tips:
- Be careful not to overcook the butter, or it will become bitter.
- If you don't have red pepper flakes, you can omit them or substitute another spice, such as cayenne pepper or garlic powder.
- This recipe makes about 1/2 cup of honey brown butter. You can store it in an airtight container in the refrigerator for up to 2 weeks.
For the fry batter and lobster:
- Mix all the batter ingredients together in a bowl.
- Heat the oil to 375°F in a frying pan.
- Lightly season the lobster with garlic powder, Old Bay seasoning, and honey powder.
- Lightly coat the lobster pieces with the batter mixture.
- Place the lobster bites carefully into the oil.
- Fry until golden brown and cooked through.
- Mix the cooked lobster bites with the sauce.
For the cornbread waffles:
- Whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl.
- Make a well in the center, and add the milk, honey, eggs, and vanilla bean paste.
- Mix well to combine, then add in the slightly cooled melted butter. Mix again until just combined; don’t over-mix.
- Let the batter rest in the fridge for at least one or two hours and up to one day.
- Preheat your waffle iron according to the manufacturer's instructions.
- Cook the waffles until golden brown and crisp.
- Serve the Honey Fried Lobster Tail over the Cornbread Waffles with a honey brown butter sauce drizzle.
