  • 1/4 cup unsalted butter, melted and cooled slightly

Instructions:

Sauce Tips:

  1. Be careful not to overcook the butter, or it will become bitter.

  1. Mix all the batter ingredients together in a bowl.
  2. Heat the oil to 375°F in a frying pan.

  4. Lightly coat the lobster pieces with the batter mixture.
  5. Place the lobster bites carefully into the oil.
  6. Fry until golden brown and cooked through.
  7. Mix the cooked lobster bites with the sauce.

For the cornbread waffles:

  1. Whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Make a well in the center, and add the milk, honey, eggs, and vanilla bean paste.
  3. Mix well to combine, then add in the slightly cooled melted butter. Mix again until just combined; don’t over-mix.
  4. Let the batter rest in the fridge for at least one or two hours and up to one day.
  5. Preheat your waffle iron according to the manufacturer's instructions.
  6. Cook the waffles until golden brown and crisp.
  7. Serve the Honey Fried Lobster Tail over the Cornbread Waffles with a honey brown butter sauce drizzle.
