Bacon, Avocado, and Maine Lobster Sandwich

Upgrade lunchtime with this Bacon, Avocado and Maine Lobster Sandwich. Make it easy by using pre-cooked Maine Lobster meat.

Ingredients

  • 1 lb of thawed Maine lobster meat, patted dry
  • 2 tbsp mayonnaise
  • 2 tsp lemon juice
  • 2 tbs chives, diced
  • Salt and pepper
  • Toasted bun
  • Bacon
  • iceberg lettuce
  • 1 avocado, sliced
  • 1 tomato, sliced
  • Chive
  • Juiced lemon
  • Shredded lettuce

Directions

  • Defrost whole frozen Maine Lobster meat by leaving in the refrigerator for 24 hours prior to use, pat dry
  • Add 1-2 TBSP of mayonnaise
  • Season to taste
  • Add lemon juice
  • And lemon zest
  • Mix in fresh chives, stir to combine
  • Stack ingredients
