While Swordfish is landed all year from around the globe, it's the Fall Season when we get the best catch in the world right here in New England. Swordfish migrate north into our cold Gulf of Maine waters in late summer and the swordfish fleet heads out in Fall to longline for them. These fish reach impressive sizes of up to 1,000 pounds each and can put up quite a fight. We believe there is no substitute for these wild local swordfish: caught on trip boats, the fleet returns to Portland where we buy the best of the catch on the docks. The result: the freshest, best tasting swordfish you've ever had in your kitchen. Meaty yet lean, swordfish is flavorful but also delicate and not overpowering in flavor. Easy to prepare, swordfish can be baked, panfried, or broiled - but we think they are the best when on the grill (even as kabobs). Dress them with your favorite spices or simply season with salt and fresh lemon.
