Receiving Frozen Products:
When you receive a food item marked “Keep Refrigerated” or “Perishable”, open it immediately and check its temperature. The food should arrive frozen or partially frozen with ice crystals still visible or at least refrigerator cold—below 40 °F as measured with a food thermometer. Even if a product is smoked, cured, vacuum-packed, and/or fully cooked, it still is a perishable product and must be kept cold. If perishable food arrives warm — above 40 °F as measured with a food thermometer — notify the company. Do not consume the food. Do not even taste suspect food.
Can I eat a lobster that died in transit?
YES. You will need to monitor the lobsters and keep in mind that if they do perish, you will need to cook them within 8 hours of noticing the lobsters have passed. Cook the lobster in a separate pot so you know which one did not survive the trip. His/her meat should be just as firm as the rest. If the meat is not good, it will be crumbly. Please take Photographs of the product and EMAIL US.
It can be difficult to tell sometimes if a lobster is actually DOA (Dead On Arrival), or just sluggish after the long trip from the flight.
One good test is to touch the lobster’s eye and watch for movement (gross, but true). If there are no signs of life, don’t give up yet!
You may have heard otherwise, but we know that a lobster does not have to be alive at the moment you are cooking it in order to still be good. It is more a matter of the temperature at which the lobster has been kept, and the length of time that has passed, that determines whether it is still good.
What should I do?
COOK IT! Remove the rubber bands from the claws of the dead (or suspected dead) lobster to keep track of it, if any others are alive.
It is completely safe to cook all the lobsters together. Fully cook the lobster according to the instructions provided in your cooking manual or on this website. When done, check the consistency of the tail meat. If the meat appears firm and fleshy then it is fine to go ahead and enjoy! If the meat has more of a cottage cheese texture – very watery, loose and mushy, then it should be discarded.
When should I cook my Lobster?
We advise you cook your lobsters on the same day, but if stored in the refrigerator, they should be fine for the next day. Please understand that if you wish to keep your lobsters to the following day, you are doing so at your own risk. We cannot guarantee lobsters beyond the day of delivery.
Is my online order secure?
YES. All online orders go through encryption and you credit information will not be used for anything beyond your order. You will notice “https” when you are in the checkout area; this ensures your security.

Questions about what is inside the lobster and safe to eat?
1. Are the eggs edible in the Lobster Tail?
If the eggs are Black that means the Lobster is not cooked enough. Throw the Lobster back in a little longer until the eggs turn RED! Red eggs are delicious and are fine to eat, also known as Lobster Caviar.
2. What About the Tomalley?
Tomalley is the liver of the Lobster, located between the tail and the body of the lobster. Many people love to eat this and consider it a delicacy. Others do not like it and rinse it off before chowing down.
3. I see some white stuff on the lobster meat?
That is the fat from the lobster after being cooked, it is normal and means the lobster is fresh. Rinse it off and enjoy your Maine Lobster
